Delicious thoughts: Along with escargots, duck confit is one of my all-time favorite French dishes. I suppose you kinda can't go wrong with an already flavorful, tender bird being roasted in its own fat. Although I enjoyed this entree, with herbed polenta, at a recent wine-pairing dinner, the duck confit is a permanent fixture on Toulouse's menu.
After dinner there, you may want to order a dessert that's not only good to your tastebuds, but good to the community.
